I have been struggling with a cold all week trying everything method I can think of to knock it out. Chicken soup is one of the oldest, most recommended methods for nasty colds like this one, but as someone who can’t stand canned soup, I decided to make my own. This chicken soup is not the one your mother used to make. Its the best chicken soup I have had to date.

The Best Chicken Soup Ingredients

This recipe is a little different from other chicken soups. Instead of noodles, I used couscous and created a thicker soup with chicken, mushrooms, spinach and green beans. I wanted to get as many vegetables as I had in for all the vitamins. While I am not one for measuring, I just added in seasonings to taste. I like a little bit of kick to my soup, so I added in Cayenne pepper as well. If you don’t like spice, I would avoid adding this.

Step One

In a dutch oven or soup pot, heat olive oil over medium-high heat with chopped onions and garlic until the onions are translucent and fragrant.

Step Two

Add in chicken breast, green beans, and chicken stock. Make sure the entire chicken breast is covered, add water or extra stock if needed. Add in seasonings to taste, and boil.

Step Three

Once boiling, add in couscous and turn heat to medium-low and let simmer uncovered for 20-25 minutes until chicken breast is cooked.

Step Four

After about 10-15 minutes, add in mushrooms and spinach, stir. Add in extra seasonings to taste, and let simmer for the remaining time. After the time ends, remove chicken and shred with two forks. Add chicken back in, and enjoy!
